Irish Roasted Salmon

SERVES 4 COOKING: 1 HR 12 MINS

Ingredients

4 x 6oz Salmon Fillets

2 Tablespoons Honey

1/4 Cup Cider Vinegar

1/4 Cup Irish Whiskey

2 Teaspoons Chopped Fresh Thyme

2 Tablespoons Vegetable Oil

Salt and Pepper to taste

Method

  • Mix together honey, vinegar, whiskey, thyme, lemon zest, oil, salt and pepper. Pour over salmon and marinate for 1 hour unrefrigerated or 4 hours refrigerated.
  • 2. Preheat Oven to 450oF / 230oC / Gas Mark 8.
  • Remove Salmon from marinade and place on a rack over a roasting pan.
  • Grill or bake for 10—12 mins, basting once with the marinade or until golden and white juices are just beginning to appear.
  • Serve and enjoy!
