Today, Cole's source their fish and seafood from the major fish markets in the UK. Stock is based on orders received in the office by email, telephone call or voicemail. Special requests for particular fish are no problem, if you have a special menu in mind and a little advance notice gives the Team time to locate and deliver exactly what you desire.
At the Cole's fish preparation site on the East Coast Business Park, thousands of fish are prepared every week by Filleting Masters for delivery to homes, hotels and restaurants across East Anglia.

Another of the ever increasing circle of farmed fish, this is the largest of the flat fish. With the liver oil being rich in vitamin A and D it is being used to help alleviate conditions such as arthritis.
With no evidence of over fishing, the Lemon Sole makes for a delicious alternative to some of the more popular flat fish such as Plaice for example.
Probably the most popular of all the flat fish, we are slowly seeing this fish less and less on the daily menu, with the Lemon Sole and the Witch Sole being used as a sustainable alternative.
